Gluten-Free, Syn-Free Pancakes

I’m going to start with the actual gluten-free and syn-free pancake recipe before I waffle on about how good it is as I find it so frustrating when I’m searching for a recipe but have to scroll for ages trying to find it.  Sometimes, I just want the food!!


  • 40g gluten free oats (I use Quaker)
  • 2 eggs
  • 1 tsp vanilla essence
  • 4 tbsps fat free yoghurt (I use plain, not flavoured)
  • 1 tbsp Sukrin sweetener (I believe this is completely free on Slimming World – please correct me if I’m wrong xx)
  • 3/4 tsp baking powder


  1. Blitz the oats in a blender until they are a fine dust (I’ve got one of those small ones for smoothie bottles and that does the job so don’t worry about needing anything big and fancy)
  2. Put the dusty oats into a large mixing bowl and put the rest of the ingredients in (I don’t have an order – I just chuck them all in)
  3. Use a whisk to mix them all together (again, I just have a hand held whisk so nothing fancy – I reckon a big spoon will even be fine)
  4. Leave to settle for about 10-15 mins.  Apparently this is for the oats to become soggier.
  5. Spray some sunflower oil FryLight in a frying pan (once again, nothing fancy but some people do have proper pancake makers and these should do the job too)
  6. Heat the frying pan over a low heat 
  7. Spoon a decent blob of the batter into the frying pan and let it cook for about 45 seconds
  8. Use a spatula to flip the pancake and cook on the other side
  9. Enjoy ♥

Being coeliac and following the Slimming World diet is tricky.  It’s bad enough that most of the gluten free food is substituted with sugars and/or artificial sweeteners as this makes it so hard to lose weight because gluten free food can have a load of sneaky syn hiding in them.

But one thing I love about Slimming World is that people in the SW community switch up recipes and then share them on platforms such as Instagram and Pinterest (I take NO credit for putting this recipe together, I just followed one from the internet).

Last week, I found a recipe for gluten-free, syn-free pancakes and decided to give them a whirl, using the H2B as my guinea pig.

Now, poor Lee has had to try several of my GF/SF treats in the past… the mug cake being one of them but the less said about that, the better.

However, these pancakes were a game changer!  They really do taste like real American pancakes and I served them with strawberries, a blob of squirty cream and a sprinkle of chocolate chips.  I also squirted some (syn free!!) Skinny Food Company Maple Syrup over them – delish!  Lee’s words… “Wow!!  These are amazing!”  He even asked for them on his birthday last week.
